Prime Cost is Total COGS + Total Labor. It accounts for almost all of a business’s controllable costs and approximately ⅔ of total expenses. Here are some tips and tricks for getting your arms around Prime Cost:

View it holistically: The cost of creating your product comes from the cost of buying it and the cost of making it. Restaurants heavy in scratch cooking may have higher labor, while restaurants purchasing more meat and prepared foods may have higher in COGS.

65% is the magic number: Setting target percentages between COGS and labor depends on the concept, but generally, food falls between 24-30% and labor between 35-40%.

Tackle food first: at EHS, we’re sensitive to attacking the labor model because we know your people matter, so the best way to improve profitability over the long term is to develop solid food cost management principles.

Breaking news: Judge Virginia Kendall just issued an opinion on the Interchange Fee Prohibition Act, and it’s a win for restaurants! This means that barring legislative action or an appeal, as of July 1, 2026, swipe fees can no longer be charged on sales tax or gratuities. Swipe fees have spiraled out of control and are among restaurants’ top costs. We applaud Judge Kendall’s decision, especially at a time when restaurants are struggling.

EHS Business Solutions, a Chicago-based, leading restaurant focused, Accounting and Consulting firm is looking for an experienced Restaurant Accounting Manager or Controller who is able to lead a team of enthusiastic staff, working with multiple restaurant clients. Our team is made up of fun-loving, hard-working individuals who have a passion for providing sound accounting services to small and medium sized, independently owned restaurants.

Duties Include
• Reconciliation of POS sales and deposit activities
• Payroll review & posting
• Accounts Payable
• Sales Tax Calculation and Filings
• Bank reconciliations
• General Ledger journal entry
• Account analysis/reconciliations
• Period Close
• Preparation of weekly & monthly reports
• Cash Forecasting
• Review of staff monthly work and reporting.
• Assist ownership with implementation of processes, and procedures
• Lead a team of restaurant accounting staff

Experience and Qualifications
• Minimum of 5 years of experience in accounting in a restaurant environment
• Bachelor's degree required
• Strong management and interpersonal skills
• Previous restaurant accounting required, and operations experience preferred
• Extensive experience with data entry, general ledger functions and reporting.
• Advanced data analytical skills, strong attention to detail
• Ability to create complex reporting in Excel
• Candidate should be able to multitask and work independently with the expectation of providing quality, accurate work in a timely manner.

• Versatility, flexibility, and a willingness to enthusiastically work with restaurant management and ownership. Strong interpersonal and communication skills are imperative.
• QuickBooks Online or Restaurant 365 Accounting Software experience
• Experience with reporting from various Point of Sales (POS), Toast POS & Upserve experience a plus.
