Most Philippine restaurants run tight margins by default. Internal controls aren't about preventing fraud, they're about actually knowing where your money went.
The four gaps we see most often across F&B clients: cash handled by the same person recording the sales, inventory counted once a month (that's a 30-day blind spot), supplier invoices paid without matching them against the PO and delivery receipt, and petty cash and the cash drawer used interchangeably.
Each one feels manageable until you're operating a second or third branch. Then the variances start showing up, and by the time you notice, the damage is already in the numbers.
Here's what actually closes those gaps:
- Daily reconciliation per payment channel — cash, card, GCash, Maya, all of it separately
- Theoretical food cost per menu item, updated when supplier prices move, not at quarter-end
- Three-way matching on every supplier payment before it goes out
- Weekly counts on high-value items, with someone outside the kitchen verifying them
- A monthly P&L with actual vs. theoretical food cost variance, closed within two weeks of month-end

Most Philippine MSME loan applications aren't declined because the business is weak. They're declined because their books are unreadable.
Banks, fintechs, and government lenders all have capital available — but less than 5% of total bank lending currently reaches MSMEs. The gap isn't funding. It's bankability.
And the options are wider than most founders realise. SB Corp, Land Bank, DBP, First Circle, Tonik, Maya, venture debt — the full landscape is there. The businesses that can't reach it aren't being shut out by the market. They're being shut out by their own financials.
Here's what actually changes the outcome:
