So we started selling things again that we don't need, and Kyle sold his kerosene heater that was bought to help his home gym! Trust us, even with a heater in Minnesota winters, uninsulated garages are not fun to workout in! ๐Ÿ˜‚๐Ÿ˜‚

We are using that to out into 3 of our sinking funds as well.

If you remember, sinking funds are savings for large events that you KNOW and PLAN for. With bdays and christmas right around the corner we focused on that, with a larger amount towards taxes so we could hit our end goal before tax time!

Our mindset.

Yes, we budget every month to do something "fun" like orchards, festivals, etc. But a "vacation" will be on pause until we are done with BS2 (all debt paid off) and BS3 (3 to 6 month emergency fund).

As we always repeat from live today like noone else so later you can live like noone else!

Slow-Cooker Copycat Chipotle Barbacoa -Mexican Barbecue Beef 10/07/2020

๐ŸŒฎ I promised you all on our last podcast that I'd give you a review on the copycat Chipotle barbacoa recipe I made, and here it is!

When i first tasted the finished product by itself, I thought that it was good, but wasn't really a copycat of Chipotle.

Then I tried it in a hardshell taco with cheese and lime juice. For one, it's SUPER good! For two, it tasted pretty close to Chipotle's barbacoa! Not exact, but pretty close ๐Ÿ˜‹

I only made a forth of this recipe (it makes 20 servings. So i cut the measurements in half, twice). Here's the measurements I used that turned out well for a weeks worth of meat for myself :)

2 pounds boneless chuck roast (trimmed of excess fat and cut into 2 inch cubes)
1 tablespoon vegetable oil or canola oil
2 chipotles in adobo with sauce
5 large white onion (peeled and roughly chopped)
2.5 cloves garlic (peeled and roughly chopped)
1 cup beef or chicken broth
1/3 cup apple cider vinegar
1/8 cup lime juice
1 tablespoon cumin
5 tablespoon oregano
1/8 teaspoon ground cloves
5 teaspoon kosher salt
25 teaspoon ground black pepper
1 bay leaf
