Important points to start catfish farming:

OVEN BAKED DELICIOUS CATFISH @₦25,000 PER KG OF 15PIECES AND ABOVE...

1. The first step in fish smoking business is to obtain some fresh fish. If the fish isn’t fresh, it will make the finished product taste bad.
2. The size of the fish to be purchased will depend on your customers. Catfish harvest is categorized into two; Melange (300g -600g) and Table size (600g and above). Do your research and find out what the needs of your customers are before going ahead to buy.
3. To kill the catfish, put them in a container and add a reasonable amount of cooking salt and cover the container with a lid and place a heavy object on the lid to prevent the fish from getting out of the container. Leave the fish in the container with the salt for about 45 minutes. For those who don't use salt for health reasons, cover the fish in hot water for a few minutes (5-10 minutes). This helps kill and clean the fish.
4. After 45 minutes, take the catfish out and begin to clean. The cleaning involves the removal of the gills, intestines, and the use of clean water to rinse thoroughly.
5. After cleaning the fish, you can curl the fish into the popular circular shape or leave them. This is really up to you.
6. Soak the fish in brine (Salt and Water) as this will help firm up the flesh and add flavor to the catfish.
7. You either smoke with traditional open fire (with firewood or charcoal as the fuel) or kiln (oven).
